Cranberry Orange Muffins

Alright, friends. It’s time to grab the TikTok DIY muffin tulip cup video and put it to work.

To take a step back, my grandma always had a ton of citrus available in her home, especially during the winter months. I didn’t understand it at the time, but my grandma, being a registered dietitian and aware of growing seasons, would always by seasonal whole foods. And since winter is citrus season, I now understand the increased Vitamin C intake. Keep us healthy while also burning through her endless supply of oranges.

Fast forward several years, I caught the citrus bug. We love oranges and always have a surplus in our home. If you’re like us and you have a few oranges lying around, check out this Cranberry Orange Muffin recipe. And if you don’t have a ton of oranges lying around, that’s okay. Head to the store … oranges are in season 🙂

I used 3 medium sized navel oranges for this recipe, and all zest and juice were used!

Cranberry Orange Muffins

Ingredients:

1.5 cups flour
3/4 cup granulated sugar
2 heaping teaspoons baking powder
1/2 teaspoon salt
1/3 cup vegetable oil
1 egg
1/4 cup almond milk (subs work too)
1/2 cup orange juice
2 tablespoons orange zest
1 cup cranberries

Topping before baking (optional)
Turbinado sugar
Orange zest

Instructions:

  1. Preheat oven to 400° Fahrenheit.
  2. Mix flour, sugar, baking powder, salt and zest in one bowl.
  3. Mix oil, egg and milk substitute in other bowl.
  4. Bring together the wet and dry ingredients. Then add in orange juice. Fold in craberries just to combine.
  5. Line muffin tin. My muffin tin holds 6 pretty substantial muffins and this recipe worked well for this holder. Scoop batter into tin. Fill about 3/4 of the way – no need to be shy. Top with turbinado sugar and orange zest mixture (optional).
  6. Bake for 20 minutes, until toothpick comes out clean.

My Midwest Notes:

I was a little lazy with the measuring. I didn’t level off the flour when measuring. I did generous teaspoons with baking powder. All that is to say, this recipe is extremely forgiving. My goal is to get muffins on the table and this recipe does that in a very easy and delicious way.
