Creamy One-Pot Pasta

Creamy, quick, delicious, and dare I say lazy pasta with my favorite noodle – Fusilli col Buco.

This creamy pasta can be a quick make-ahead meal or one for those busy nights that results in silky pasta sauce that doesn’t skimp on big flavor.

Honestly, it’s delicious that even kiddos will enjoy. And feel free to dial back the red pepper, but we like a little spice.

Creamy One-Pot Pasta with Fusilli col Buco

Ingredients:

1/4 cup softened cream cheese
1 cup fresh basil
1 tomato, roasted in oven, 350° Fahrenheit for about 30 minutes
1 tablespoon olive oil
1 tablespoon garlic powder
1 teaspoon thyme
1 teaspoon salt
1 teaspoon red pepper flakes
Fusilli col Buco
Pasta water, reserved for sauce
salt and pepper to taste, as needed
Parmesan cheese, to finish

Instructions:

  1. Roast tomato. As the tomato roasts, place cream cheese, basil, olive oil and spices into a container.
  2. Remove tomato from the oven and place in the container with cheese, basil, oil and spices. Cover and let it sit for about 10 minutes.
  3. Cook pasta.
  4. As pasta nears completion, add a little pasta water to the container and blend. I used an emulsion blender but if you don’t have one, feel free to mix or blend.
  5. Drain pasta and reserve some water.
  6. Add in pasta sauce to warm through and then add pasts. Add reserved pasta water as needed to loosen sauce. Let it come together for just a few moments.
  7. Plate and top with parm. Measure with your heart.
