Banana Bread

Banana bread is one of those recipes that can flex a bit with its flavors. This banana bread recipe works tremendously well as is and can have the flavor turned up by adding your own extras.

Bonus: this is a one-bowl-only recipe. No mixer needed.

Banana Bread

Ingredients:

2 very ripe bananas, peeled and mashed
1/3 cup unsalted butter, melted
1 cup brown sugar
1 large egg, beaten
1 teaspoon vanilla extract
1 1/2 cups AP flour
1/2 teaspoon baking soda (not baking powder)

Instructions:

  1. Preheat oven to 350°.
  2. Smash up the bananas in a bowl.
  3. To the smashed bananas, add in the beaten egg, melted (cooled) butter, vanilla and brown sugar.
  4. Once mixed, add in the baking soda and flour.
  5. Mix to just combined.
  6. At this point, you can bake off in a loaf pan for 50 minutes. Or, you can add in 1/2 cup of chocolate chips, 1/2 cup of chopped pecans (which I did both) or anything else you would like to add.
  7. After 50 minutes, check with a toothpick to make sure it comes out clean.
  8. Completely cool on rack before cutting slices.
