Banana bread is one of those recipes that can flex a bit with its flavors. This banana bread recipe works tremendously well as is and can have the flavor turned up by adding your own extras.
Bonus: this is a one-bowl-only recipe. No mixer needed.
Banana Bread
Ingredients:
2 very ripe bananas, peeled and mashed
1/3 cup unsalted butter, melted
1 cup brown sugar
1 large egg, beaten
1 teaspoon vanilla extract
1 1/2 cups AP flour
1/2 teaspoon baking soda (not baking powder)
Instructions:
- Preheat oven to 350°.
- Smash up the bananas in a bowl.
- To the smashed bananas, add in the beaten egg, melted (cooled) butter, vanilla and brown sugar.
- Once mixed, add in the baking soda and flour.
- Mix to just combined.
- At this point, you can bake off in a loaf pan for 50 minutes. Or, you can add in 1/2 cup of chocolate chips, 1/2 cup of chopped pecans (which I did both) or anything else you would like to add.
- After 50 minutes, check with a toothpick to make sure it comes out clean.
- Completely cool on rack before cutting slices.
