I suppose the word of the week is “loaded”. But really, the word could also translate to “pantry meal”! So, let’s do it.
Sheet pan loaded nachos is hands-down one of my favorite weeknight meals. A true crowd-pleaser, the nachos offer a little something for everyone. This week, I created two trays based on the crowd.
Tray 1: Heavy focus on veg – pico, green peppers, corn, red onions (my love), beans and then added in jalapenos, spiced chicken. Topped with queso, sour cream and lime.
Tray 2: Heavy focus on protein – ground turkey with taco seasoning, refried beans, black beans. Then, black olives, cheese, guac and sour cream. A few ripped up tortilla shells for softer chews (we have some missing teeth in the fam). Lime on the side.
And served along side: the extras, like the leftover corn, beans, green peppers. Nothing new but rather more of the same displayed in a different way. This helps my youngest who, for example, could not eat enough of tray 2 but also wanted green peppers and corn on the side.
Serve with hot sauce, ranch, salsa, all the sauces. And enjoy! Hopefully this adds a little more time to your schedule this week and next.
