Pesto Broccoli Chicken Casserole



No measuring in this dish! This casserole is made even easier by dumping ingredients into a single baking dish and bringing together with delicious pesto, EVOO and butter! (And if you’re looking for the best casserole dish ever, look no further … )

Ingredients:

1 box of penne
1 jar of pesto
1 chicken breast, cooked and chopped
1 bag mozzarella cheese
1 bag frozen broccoli, cooked
Olive oil and butter
Salt and pepper

Instructions:

  1. Preheat oven to 350
  2. Cook pasta and strain. Add to baking dish
  3. Add full jar of pesto, broccoli and chicken.
  4. Add 3 tablespoons of olive oil and 3 tablespoons of butter
  5. Top the casserole with mozzarella cheese.
  6. Cover with foil and place in the oven for 30 minuntes.
  7. After 30 minutes, uncover the casserole and broil for a few more minutes.

A Few Tips to Elevate the Sauce:

Reserve a little pasta water and cook pesto, pasta water, EVOO and butter in pan to make more combined sauce.

Shred your mozzarella vs buying already shredded and add in Monterey Jack cheese.
