The Everything Cookie

A little salty. A little sweet. And delicious brown butter makes this the perfect cookie.

Ingredients:

2 sticks of butter, unsalted
3/4 cup granulated sugar
1 1/4 cup packed dark brown sugar
2 eggs
1 tablespoon vanilla
3/4 teaspoon baking soda
1 teaspoon baking powder
2 1/2 cups all-purpose flour
1 teaspoon salt

Mix-Ins:

You can absolutely customize this list to your liking and measure with your heart! I used the following:

Potato chips
Pretzels
White chocolate chips
Milk chocolate chips

Instructions:

  1. Melt the sticks of butter in a pan over medium heat. Once the melted butter begins to bubble vigorously, cook for another 5 minutes, swirling and stirring occasionally, until the bubbles slow down and turn into foam. At the bottom of the pan, you’ll start to see toasty brown flecks. Take off the heat and let it sit to the side to cool.
  2. Once cool, in a standing mixer on medium-low, stir together the granulated sugar and dark brown sugar. Slowly pour in the brown butter. Don’t miss those brown flecks!
  3. Turn the mixer to medium, and add in the vanilla. Then drop in one egg at a time until incorporated.
  4. In a separate bowl, combine the salt, flour, baking soda and baking powder. Slowly add to the standing mixer and mix until just combined.
  5. Stop mixer and fold in your desired mix-ins.
  6. Roll out cookie dough into balls with an ice cream scoop. These can be generous!
  7. Once on a tray, cool them overnight in the refrigerator. After this, the cookies can go directly into the oven or the freezer for delicious cookies at a later date.
  8. If we’re ready to cook, preheat the oven to 350 degrees.
  9. Bake the cookies for 15-18 minutes. Check the cookies at 12 minutes and turn if needed.
