Lemon Orzo Chicken Soup

Classic comforts in a bowl that can come together as quickly as you’d like … or make your own stock and let it go low and slow all day. I love soups that accommodate your lifestyle.

Ingredients:

6 cups chicken stock or broth
1 rotisserie chicken, shredded
1 cup chopped carrots
2 lemons, juiced
1 cup of orzo pasta, uncooked
1 tablespoon minced garlic
1 tablespoon minced onion or 2 teaspoons of onion powder
Salt and pepper
Parsley
Any toppings you like … I recommend goldfish!

Instructions:

  1. To a large pot, add in chicken stock/broth, garlic, onion, salt and pepper. Start to simmer and drop in shredded chicken.
  2. Add in half of the lemon juice and bring to a boil.
  3. Drop in the uncooked pasta, cover for 10 minutes until pasta becomes tender.
  4. Remove lid, reduce to simmer, and add in remaining lemon juice.
  5. Taste for salt and pepper. Adjust as needed.
  6. Top with parsley and other toppings.
