Classic comforts in a bowl that can come together as quickly as you’d like … or make your own stock and let it go low and slow all day. I love soups that accommodate your lifestyle.
Ingredients:
6 cups chicken stock or broth
1 rotisserie chicken, shredded
1 cup chopped carrots
2 lemons, juiced
1 cup of orzo pasta, uncooked
1 tablespoon minced garlic
1 tablespoon minced onion or 2 teaspoons of onion powder
Salt and pepper
Parsley
Any toppings you like … I recommend goldfish!
Instructions:
- To a large pot, add in chicken stock/broth, garlic, onion, salt and pepper. Start to simmer and drop in shredded chicken.
- Add in half of the lemon juice and bring to a boil.
- Drop in the uncooked pasta, cover for 10 minutes until pasta becomes tender.
- Remove lid, reduce to simmer, and add in remaining lemon juice.
- Taste for salt and pepper. Adjust as needed.
- Top with parsley and other toppings.
