The definition of cozy … you butter believe it!
Ingredients
1 package grape tomatoes
1 can butter beans, no need to strain
2 tablespoons butter
2 tablespoons minced garlic
2 teaspoons red pepper flakes
¼ cup heavy whipping cream
Salt and pepper, to taste
Instructions
- Add butter to a pan and let the pan get hot. Once butter starts to brown, toss in the package of grape tomatoes, salt, pepper, garlic and red pepper flakes.
- Cover the tomatoes and cook for about 10 minutes, just until tomatoes start to burst and break down slightly.
- Reduce heat and stir tomatoes. Then stir in butter beans. Slowly simmer for about 10-15 minutes, until liquid starts to thicken.
- Pour in the heavy whipping cream and stir together.
- Turn off heat, taste for seasoning.
- Top with fresh-grated Parmesan (optional).
I enjoyed this with crunchy sourdough toast, but this would be great with any protein, any greens, any utensil 🙂 Don’t sleep on these butter beans.
