Creamy Tomato Butter Beans

The definition of cozy … you butter believe it!

Ingredients

1 package grape tomatoes
1 can butter beans, no need to strain
2 tablespoons butter
2 tablespoons minced garlic
2 teaspoons red pepper flakes
¼ cup heavy whipping cream
Salt and pepper, to taste

Instructions

  1. Add butter to a pan and let the pan get hot. Once butter starts to brown, toss in the package of grape tomatoes, salt, pepper, garlic and red pepper flakes.
  2. Cover the tomatoes and cook for about 10 minutes, just until tomatoes start to burst and break down slightly.
  3. Reduce heat and stir tomatoes. Then stir in butter beans. Slowly simmer for about 10-15 minutes, until liquid starts to thicken.
  4. Pour in the heavy whipping cream and stir together.
  5. Turn off heat, taste for seasoning.
  6. Top with fresh-grated Parmesan (optional).

I enjoyed this with crunchy sourdough toast, but this would be great with any protein, any greens, any utensil 🙂 Don’t sleep on these butter beans.
