One-Pan Chicken + Stelline “Soup”

I struggle to call this a chicken noodle soup but it definitely pulls from this. I was seeking a cozy, one-dish-only lunch and this was so ideal. Perhaps it’s just the mom version of the my kiddos’ favorite canned soup…

Either way, it’s what I needed. So nostalgic but heavy on the things I love most about the soup.

Ingredients:
3-4 cups broth
1/2 cup stelline
1/2 cup frozen veggies, cooked
1 chicken breast, cooked
2 tablespoons butter
2 teaspoons thyme
S&P

Instructions:

  1. Add broth and thyme to pan and bring to boil. Also add in pepper, if preferred.
  2. Add stelline and butter. Cover with lid and simmer for about 10-15 minutes.
  3. Stir in cooked vegetables and chicken.
  4. Let it simmer together for a few minutes. Taste and add salt/pepper to taste and enjoy!
